CULATTA MAI SAZI – ITALIAN CURED MEAT
Culatta (a.k.a. Fiocco, “bow”) comes from the hind legs of pigs that are exclusively Italian, controlled and guaranteed. After being accurately selected, the hind legs are trimmed, placed in brine and matured for at least 6 months. Unlike Culatello, Culatta has rind and a small bone. Tasty but soft and sweet at the same time, its slices are just perfect, both in taste and appearance.
