There are numerous varieties of pumpkins of the curcubita moschata species, including the Moscata or Provençal pumpkin, loved for its flavor and its nutritional properties; with its flattened shape it can reach a weight of approximately 15 kg.
The skin of the Provence muscat pumpkin is bronzed-ochre in color and has very marked grooves.
The pumpkin pulp is actually low-calorie, and contains a high concentration of water (up to 94 percent). It is also rich in fiber and has a very low percentage of simple sugars. Among its properties we point out that it is particularly rich in vitamins A, C and beta-carotene, as well as mineral salts such as potassium, calcium and phosphorus.
The Provence muscat pumpkin is rather appreciated for the quality of its pulp which is intense orange in colour, thick and very tasty.
Recommended for the preparation of cream soups, soups and risottos.

Forerunners of this extraordinary vegetable, the Restani family arrives today with respect to the third generation bringing a more refined, modern and contemporary contribution, that of the two sisters Michela and Elisa Restani.
