The “Caciocavallo Silano” is undoubtedly one of the oldest spoon paste cheese from
Southern Italy. In the 1996 has been awarded the DOP category. The fire brand, depicting a pine certifies authenticity. To protect the production was born the Consortium Cheese Caciocavallo Silano. To produce one kg of “Caciocavallo” takes about ten liters of fresh milk obtaining a product from the high nutritional value. The milk used by our company for the production of this wonderful cheese is the result of a careful classification and search for best local livestock production. The forms are tied in pairs with suitable fastenings and suspended with the poles in order to obtain the seasoning of up to 90 days. The weight ranges between 1.5 kg and 2.5 kg. The crust is thin, smooth, sharp straw color. The paste is homogenouos and compact with an aromatic flavor, pleasant very delicate and sweet when the cheese is young to become spicy advanced maturity.
