This is a unique traditional product from Abruzzo, obtained from a paste of black Abruzzo swine meat and fat. The paste is finely minced and heavily seasoned, with a delicate note of spice from chillies. Ventricina does not need preservatives or additives; the paste is traditionally stored in a thick natural intestine casing, which preserves its softness.
