Our Canestrato Affinato al Nero di Troia is obtained by refining it in the wonderful wine from Daunia. It is made in the characteristic straining basket. Manufactured in the winter months, its colour is golden, its paste is full and firm and with a strong taste, this cheese can be used grated or sliced. The flavour is tasty and with a variety of aromas given by the treatment with the Troia wine, a local variety of grapes from Daunia.
