For the production of “Patè di olive e mandorle” (olive and almond paté), Leccino olives are used. After washing and drying them, they are passed through the pitting machine. The olive pulp obtained is blended with almonds and extra virgin olive oil.

PRODUCTION TECHNIQUES
For the production of “Patè di olive e mandorle” (olive and almond paté), Leccino olives are used. After washing and drying them, they are
passed through the pitting machine. The resulting olive pulp is blended with almonds and extra virgin olive oil to obtain a cream. The resulting product is finally placed in jars that, after being hermetically sealed, are placed in baskets for pasteurization where they remain immersed for 15 minutes in water brought to a temperature of 102°C, until a temperature of 87°C is reached at the heart of the product itself.
COMBINATIONS
Olive and almond paté is excellent for seasoning meats, for creating pasta dishes or tasty appetizers or to
accompany cheeses.
HANDLING and STORAGE
Keep away from light and heat. Store the product in hygienic conditions and at a temperature not exceeding 33°C. Do not store beyond the maximum shelf life indicated on the package.
The packaging is fragile as the material used is glass which cannot withstand impacts or excessive static loads. Avoid stacking more than 10 boxes, hitting or overturning the packaging. If a box is overturned, check the condition of the packages inside (there must be no cracks, chips, dents in the lid, etc.). If the package is not intact, send it for disposal.
Once the jar has been opened, store in the refrigerator at a temperature of +4°C.
PACKING MATERIALS
The product is packaged in transparent glass jars intended for food use.
The lids are made of steel with a food grade rubber membrane that ensures the watertightness of the package and prevents direct contact of the product with the metal.
