We respect the traditional methods of olive harvesting, patiently monitoring the ripening on the branches of our silvery olive trees. A prolonged ripening could alter the color, consistency, aroma and organoleptic qualities of the olives. For this reason, we wait until the olives reach a light pink coloration of the drupe. To maintain all the characteristics of our organically grown olives unaltered, we strictly respect the milling times, which take place within a few hours of harvesting. This allows us to obtain an oil of maximum purity, of a beautiful straw yellow color, with an inebriating aroma and a taste that preserves the characteristics of the olives used. The olives are milled in our mill to guarantee a higher quality of the evo oil produced on the farm.

CULTIVATION FORM AND SYSTEM TYPE
Pantaleo Agricoltura has three different types of systems:
centuries-old, spaced about 20 meters apart, slightly lowered at the canopy to make harvesting easier.
Traditional intensive with a 6*6 planting pattern.
HARVEST PERIOD
From October to February-March depending on the year.
HARVESTING TECHNIQUE
The olives come from internal olive groves, both from centuries-old trees and from traditional intensive systems. The harvest is carried out using mechanical methods such as a tilting umbrella for the smaller trees and a knocker for the centuries-old ones. The oil is extracted through a two-phase continuous cycle system, followed by natural decantation and racking.
