Extra Virgin Olive Oil from Tuscany – ELAION 250 ml
Produced with the oldest olive trees on our plot, grown without the use of pesticides and synthetic fertilizers, extracted from olives picked by hand and selected before cold pressing, bottled and numbered manually, Elaion is our way of telling you how much we care about giving you only the best. Elaion is produced from a small olive grove on the top of a hill in central Tuscany, where there are still centuries-old olive trees that resisted the frost of 1985, which destroyed 95% of the Tuscan olive trees. The high age allows the plants to have very deep roots, which are able to absorb the mineral salts present in the lower layers of the soil and give the oil a bouquet of aromas and a range of polyphenols that are stable, elegant and long-lasting over time. The olive oil is pressed at 18° and is microfiltered after extraction, so as to completely eliminate the vegetal fraction that would, over time, cause the product to go rancid. This operation greatly increases the normal shelf life of the oil (18 months, by law) and guarantees a slower deterioration of the aromatic polyphenols
