We put our heart at the center of a territory and a philosophy: Abruzzo and the Apennines, where our animals are raised respecting their wellbeing.
Our philosophy has never changed: we follow every step of the product, from field to table, respecting the environment and our territory.
Our swines are bred in a semi-wild state. They feed on nuts, tubers, roots and other products of the woods, they grow slowly following natural rhythms, and this gives their meat a unique flavor.
The structural distribution of their muscle is fundamental, because its fat infiltration pattern is notable.
BREEDING:
The black Abruzzo swine is an exclusive, prestigious breed, that requires care and patience on the breeder’s part. A rustic, almost wild kind of swine, mid-sized and inclined to open-air grazing. This species can be found at the foot of the Central Abruzzo Apennine, an idyllic place where nature offers up her best, the essence of the land and the purity of the air.
Animal nutrition is fundamental to obtain a good product, because it contributes to the flavor and tenderness of the meat.
PROCESSING:
Halves are artisanally processed, using ancient cuts such as the “Borbone”:lonzinowith lard and skin.
The added value of this prized breed is the high percentage of lard, which allows for a longer seasoning process that in turn enables refined aromas and pleasant flavors to develop.
Made in Italy is our slogan. We make niche, natural products with the whole production process on the label. We process prestigious, rare breeds, that can also help redevelop abandoned and depopulated mountainous areas
